Broccoli Sweet Potato Tater Tots

These are easy to make and a great way to eat some veggies. In addition, you can freeze some and bake them in the oven when needed.

Ingredients (Makes about 15 tater tots):

它1 cup shredded sweet potato

它3/4 cup finely diced broccoli

它1/2 cup sharp cheddar cheese

它1 flax-egg (1 tablespoon flaxseed meal mixed with 3 tablespoons of filtered water-let it sit for 10 minutes or until it resembles the consistency of a beaten egg)

它1/2 teaspoon onion powder

它1/2 teaspoon garlic powder

它1/2 cup of almond flour

Instructions:

Preheat the oven to 400F

Add the shredded sweet potato, finely diced broccoli, and shredded cheese to a bowl. (Make sure the broccoli is very finely diced)

Mix with a spoon.

Add the onion and garlic powder.

Mix with a spoon.

Add the flax-egg.

Mix with a spoon to combine.

Add the almond flour and mix until the mixture starts to stick together.

Scoop 2 tablespoons of the mixture into the palm of your hand and squeeze it a few times for the mixture to completely come together/stick together.

Form it into a tater tot

Place it on a baking sheet lined with unbleached parchment paper. Bake it immediately or place some in the freezer.

Bake it for 15 minutes, carefully remove and rotate it on the other side and bake for another 10 minutes.

潃儭Note: If baking from frozen state, follow the same baking instructions mentioned above. However, you might need to bake it a little bit longer for it to get fully warmed through. Make sure to keep an eye on it so it doesnt turn too golden brown.

Allow it to cool and serve.
