"Fresh zucchini fried up until golden and crispy is a delish way to use up extra goodies from the garden- or fresh zucchini from the store! 🥒 Easy, yummy and loved by even the littlest babes!
For each large zucchini: zucchini sliced into small rounds
1/4 cup flour
1 egg (whisked)
3/4 cup panko breadcrumbs
1/4 cup fresh grated Parmesan cheese
salt and pepper to taste
🥒 Start off by setting up a few different bowls: one with flour, one with egg, and another with panko, Parmesan cheese and a bit of salt and pepper.
🥒 Now take each zucchini round, and coat in flour (shaking off excess), then dredge through egg (allowing excess to drip off), and then place in panko mixture and coat fully. Repeat with each round, setting aside on a plate when done.
🥒 Next, in a large skillet drizzle a bit of olive oil and heat over medium-high heat.
🥒 Once hot, place zucchini slices into oil in a single layer, cooking until golden brown, approx, 2 minutes per side.
🥒 Transfer #zucchini to a paper towel lined plate.
🥒 Finish off by sprinkling with additional salt and pepper and Parmesan, as desired.
🥒 Serve immediately. Yummm!
