Maple Pumpkin Pancakes

✔️1 and 1/2 cups milk of choice
✔️1 cup pumpkin puree
✔️2 tbsp oil
✔️1 tbsp pure maple syrup
✔️2 cups all-purpose flour
✔️1/4 cup light brown sugar
✔️2 tsp baking powder
✔️1 tsp baking soda
✔️1 and 1/2 tbsp pumpkin pie spice
✔️1/2 tsp ground cinnamon
✔️a pinch of salt
🎃 In a large mixing bowl, combine: milk, pumpkin, egg, oil and maple syrup. Whisk together.
🎃 In a separate mixing bowl combine: flour, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon and salt. Whisk together.
🎃 Pour dry ingredients into wet. Mix to fully combine.
🎃 Next, heat a skillet over medium-high heat with a bit of oil. Make pancakes as you would usually, until lightly browned. Repeat until all batter is used.
🎃 Serve immediately with additional maple syrup, or other toppings as desired. Or, freeze in an air-tight container for later.
