Easy Grilled Salmon Cakes

"For a lot of people (including us!) fish can seem a bit intimidating and a lot of times we skip making it at home. Now, admittedly we still don't eat as much fish in our home as we should (we need to work on this!) but easy recipes always help.


These Easy Grilled Salmon Cakes 👆🏻are a great one, perfect for #babyleadweaning and kids- all the way to adults! We often eat them on buns, and they are a tasty break from some of the regular suspects 😉 we often rotate through for dinner. They’re also great for lunch- or #lunchboxes!


Plated above with a side of dill sauce, watermelon hearts and the Ergonomic Utensils from @grabease, this here would be the perfect plate for a little one. Full recipe below!


Easy Grilled Salmon Cakes:

WHAT YOU NEED (for approx. 4- 6 cakes)

➕ 1/2 lb salmon fillet (skin removed and chopped), 3/4 cup panko style breadcrumbs, 1 egg, 2- 3 green onions (chopped), 1/2 a small red (or other color) pepper (small diced), 1/2 tbsp lemon juice, and a pinch of salt and pepper


HOW YOU MAKE THEM:

➕ Add all ingredients to a mixing bowl and mix everything up.

➕ Then, take a small amount of mixture out of bowl and form a small patty. *Amount of cakes/patties you can make will depend on size. We made 5 small cakes with this recipe (please also note: this recipe can easily be doubled).

➕ Heat up an indoor grill pan or outdoor grill to medium-high (we cooked ours indoors) and when pan/grill is ready, cook patties for approx. 3 min. on each side, or until cooked through.

➕ Serve immediately, with a side of dipping sauce as desired. For our dill sauce we just combined 1/4 cup sour cream, 1 tsp fresh dill (chopped), 1/4 tsp garlic powder and a pinch of salt
