Spring Almond Cookies

 

These cookies are easy to make and make for a great snack. The texture is a bit soft but not fully soft. To help soften it some more, may crumble the cookie in yogurt (let it sit for a couple minutes) and serve. The cookies can also be served on their own, sandwiched with homemade applesauce or jam.

Ingredients
🦋1 1/2 cups almond flour
🦋1/2 cup unbleached all purpose flour
🦋1/4 cup ground flaxseed meal
🦋1/4-1/3 cup maple syrup (depending on preference of sweetness)
🦋2 tablespoons of oil, I used avocado oil
🦋1/4 cup of milk

⭐️Note: if needed, may also make it with the following flour ingredients. The cookies will result into being crispy in texture.
🦋1 1/2 cups unbleached all purpose flour
🦋1/2 cup almond flour

Directions
🌸Preheat oven to 350F
🌸To a bowl, add the flours and flaxseed meal. Mix with a fork to combine.
🌸To a separate bowl, add the oil and maple syrup. Whisk
🌸Add the milk and mix.
🌸Add the oil mixture to the dry ingredients. Mix till comes together. The dough will be a bit sticky and wet.
🌸Transfer to a plastic wrap,(bring the dough together with you hands to combine)
🌸Wrap it with the plastic wrap or leave it in the bowl and place it in the refrigerator to set for about 30 minutes
🌸Place parchment paper on your work surface, then the dough, and finally another sheet of parchment paper on top of the dough (this will help prevent the rolling pin from sticking to the dough and will allow for easy rolling)
🌸Roll the dough out to your desired thickness (keep in mind, there aren’t any leveling agents in this dough so won’t rise). The thinner you cut them the crispier they will be. Cut a little thick for soft cookies.
🌸Cut out any shapes using a cookie cutter or form into round discs. Gather the scraps, form a ball.
🌸Place on a baking sheet lined with unbleached parchment paper and bake for 13-15 minutes or until the bottom of the cookies are golden brown.
