Savory Zucchini Muffins

These muffins are great for a nutritious breakfast, even for picky eaters!
Ingredients: 
💚1 cup grated zucchini
💚1 cup grated sharp cheddar cheese
💚1 + 1/4 cups whole wheat flour
💚1 egg
💚1/2 cup whole milk
💚1/2 cup full-fat Greek yogurt
💚2 tsp baking powder
💚1 tbsp onion powder
Instructions: 
👉🏻Preheat oven to 350F
👉🏻Mix whole wheat flour, baking powder, and onion powder in a large bowl.
👉🏻Whisk the egg. Mix whisked egg with milk and greek yogurt.
👉🏻Pour the wet mixture into the dry mixture. Stir until just combined.
👉🏻Add grated zucchini and cheddar cheese. Gently combine.
👉🏻Grease a mini muffin tin. Spoon batter equally into the cups. Bake for about 20 minutes until the top is golden brown.

📝 For older kids, try adding 1/2 tsp of salt to the batter and drizzling honey on top of the cooked muffins to jazz them up.
