These muffins are great for a nutritious breakfast, even for picky eaters!
1 cup grated zucchini
1 cup grated sharp cheddar cheese
1 + 1/4 cups whole wheat flour
1/2 cup whole milk
1/2 cup full-fat Greek yogurt
2 tsp baking powder
1 tbsp onion powder
🏻Preheat oven to 350F
🏻Mix whole wheat flour, baking powder, and onion powder in a large bowl.
🏻Whisk the egg. Mix whisked egg with milk and greek yogurt.
🏻Pour the wet mixture into the dry mixture. Stir until just combined.
🏻Add grated zucchini and cheddar cheese. Gently combine.
🏻Grease a mini muffin tin. Spoon batter equally into the cups. Bake for about 20 minutes until the top is golden brown.
For older kids, try adding 1/2 tsp of salt to the batter and drizzling honey on top of the cooked muffins to jazz them up.
