Nut-Free Pesto

Check out this kid-friendly and school-safe nut-free pesto! This pesto has a mild taste with half basil and half spinach. Panko bread gives a crunchy texture without any use of nuts, but you can also make it creamier by adding pasta cooking water. I got the inspiration to use breadcrumbs in pesto from chef Massimo Bottura.

Ingredients: 

  • 💚1 cup basil
  • 💚1 cup spinach<
  • 💚1 small clove of garlic
  • 💚1/2 cup panko bread crumb
  • 💚1/2 cup parmesan
  • 💚1/4 cup extra virgin olive oil

  • Instructions: 

  • 👉Add all ingredients to a food processor and blend.
  • 👉Drizzle more olive oil or pasta cooking water while mixing with cooked pasta.
