Mini Pumpkin Chocolate Chip Muffins

INGREDIENTS:
🧡 1 and 3/4 cups whole wheat flour
🧡1 tsp baking powder
🧡1 tsp baking soda
🧡1/2 tsp salt
🧡1 and 1/2 tsp ground cinnamon
🧡A pinch (less than 1/4 tsp) of ground cloves
🧡1 and 1/2 tsp pumpkin pie spice
🧡2 eggs
🧡1/2 cup light brown sugar
🧡1 cup of canned pumpkin
🧡1/3 cup butter (unsalted, melted)
🧡1 and 1/2 tsp pure vanilla extract
🧡1/3 cup milk of choice
🧡1/2 cup or so of mini chocolate chips
DIRECTIONS (makes approx. 3 dozen):
🧡 Pre-heat oven to 350 degrees.
🧡 Spray a mini muffin pan (or two if you have them) with a non-stick cooking spray. You will not want to use liners with this recipe.
🧡 In a large bowl combine all dry ingredients (first 7 listed). Whisk together and set aside.
🧡 In a separate mixing combine all remaining ingredients. Whisk to thoroughly combine, then add wet ingredients into dry and stir until just combined.
🧡 Now, add in most of your chocolate chips, reserving some for topping muffins with. Carefully fold into batter.
🧡 Then, fill muffin cups slightly less than full, and top each muffin with a couple of chocolate chips.
🧡 Bake for approx. 12 minutes, until cooked through.
🧡 Remove pan(s) from the oven and allow muffins to slightly cool. Then remove from pan(s) and repeat if a second batch is necessary.
🧡 Enjoy immediately or store in an airtight container to enjoy later!"
