If you're looking to add more fish into your weekly meal plan, these panko-crusted fish nuggets are it! They are so easy and quick to make, and super kid-friendly.
1 lb white fish
1 1/2 cups of panko bread crumbs
1 cup of almond flour
1 tsp of garlic powder
1-2 tsp of lemon zest
Salt and pepper to taste
Preheat oven to 375 F.
Cut the fish into bite size pieces.
Lay out three separate bowls.
Add flour and garlic powder in one bowl.
Whisk eggs with salt and pepper if desired in second bowl.
Add panko bread crumbs and lemon zest into third bowl.
First dip fish into flour, then eggs, then panko bread crumbs.
Lay on parchment lined sheet pan and bake for approx 18 mins flipping half way.
Air fryer method:
Follow same steps as above. Spray fish with avocado oil and place in air fryer at 400F for approx 10-12 minutes shaking half way through.
