Easy Healthy Quinoa Fritters

If you are looking for new ways to use quinoa in your cooking, save this yummy quinoa fritter recipe! 

🍴2 1/2 cups of cooked quinoa
🍴1/2 finely diced onion
🍴2 cloves of garlic or 1 tsp of granulated garlic
🍴1 tbsp of finely chopped chives
🍴1/4 cup of grated parmesan cheese
🍴3/4 cup of whole wheat bread crumbs
🍴Olive oil or avocado oil for the pan
🍴Salt and pepper to taste (optional)

🍴Cook 1 cup of dry quinoa in 2 cups of boiling water. Bring to a boil and then let simmer for 15 minutes with lid closed.
🍴Finely chop the onion, garlic and chives.
🍴Beat eggs in a small bowl.
🍴In a large mixing bowl, add into the cooled quinoa, all the ingredients.
🍴Heat a large pan just below medium heat with olive or avocado oil. Take a tablespoon of the mixture and mold in your hand a small sized patty and place on pan.
🍴Cook with lid on for approx 5 minutes. Flip to the other side for another 5 minutes with the lid off.
🍴Let cool and serve right away plain or with dipping sauce of your choice!
