Halloween Themed Snack:

Roasted Butternut Squash with Apples

Butternut Squash
🔸Preheat the oven to 400F.
🔸Scrub clean the exterior of the butternut squash and pat dry.
🔸Carefully cut it in half and remove the seeds with a spoon.
🔸Place the Butternut Squash skin side down on a baking sheet lined with unbleached parchment paper.
🔸Spray avocado oil, or any oil.
🔸Sprinkle some cinnamon.
🔸Roast till fork tender, can take about 45-50 minutes.
🔸Once cooled, remove the skin, cut into desired size or shape (I used a cookie cutter), and serve.

Apples
🍎Wash, peel, and core about 3-4 apples. I used organic Gala Apples.
🍎Cut the apples into desired size or shape (I used a cookie cutter).
🍎To a bowl, add the apples, 1 tablespoon of freshly squeezed lemon juice (helps prevent the apples from turning brown), and 1/2 teaspoon of ground cinnamon.
🍎Toss to coat.
🍎Evenly spread the apples out on a baking sheet lined with unbleached parchment paper.
🍎Roast it in the 400F oven for about 10-15 minutes or until the apples are fork tender.
🍎Allow them to cool and serve them with the butternut squash.

👻 I also used the cookie cutter to cut out some cheese and served that too.
